For the vegetable fish stew, chop onions and garlic and sauté in olive oil in a pot. Meanwhile, dice the sweet potatoes and zucchini and slice the leek and lemon.
Sauté the spices for 1-2 minutes, then add the sweet potato and zucchini cubes to the pot, sauté for another 1-2 minutes and add the tomatoes in chunks.
Add lemon slices, leek and maple syrup salt and pepper and simmer everything covered for about 10-15 minutes. If necessary, add a little water. Cut salmon fillets into cubes.
Reduce heat, carefully mix in the fish cubes and let simmer for 5-10 minutes, do not boil anymore. Season with salt and pepper and serve sprinkled with parsley.
