Preheat the stove to 300 °C. Roll out the dough very thinly with the rolling pin and cut out four circles of 10 cm ø. Place the pasta circles on a prepared baking tray. Peel the onions, chop them and put them in a Reindl form. Cover with cold water and let it boil briefly. Drain and quench with cold water. Cut the bacon into small cubes. Mix curd cheese, crème fraîche and egg yolks with a whisk. Add salt, pepper and nutmeg. Coat the dough with the curd mixture. Spread evenly the onions and bacon cubes. Bake in hot oven for 6 minutes. Serve very hot.
