For steak on oranges, use a zest cutter to loosen the peel of a washed orange. Halve oranges and cut into 4 slices about 0.5 cm thin, squeeze the remaining orange halves.
Heat butter in a pan, sear steaks on both sides for 3 minutes, salt, pepper, remove from pan and keep warm in the oven.
Deglaze gravy with orange juice, orange liqueur, vinegar and beef broth. Simmer for about 2 minutes, season with salt and pepper.
Add steaks to sauce, simmer gently for about 3 minutes. Place orange slices on plates, add fillet pieces, pour sauce over and garnish with zests and finely chopped parsley.
