For the Rustic Kukuruz Salad, first remove the skin from the meat tomatoes and cut them into quarters. Scrape out the seeds with a spoon and then finely dice the fillets.

Drain the hominy well.

Wash the chicory and cut into fine rings.

Wash and clean the young onions and cut them into fine rings. Separate the white and green rings, put the green ones aside.

In a frying pan, fry the bacon cubes until they have rendered their fat. Add the white onion rings and fry them.

Add the hominy and fry it as well.

Mix well all the ingredients for the mariande.

Make a bed of salad with the chicory on a sideboard.

Add the green onion rings to the bacon, onion and hominy mixture at the very end so that they can take on a bit of flavor while remaining crunchy.

Season with salt and pepper and spread the mixture over the chicory, drizzling the marinade evenly over the top.

The Rustic Kukuruz Salad is ready.
