Cut beef into cubes. Grate half of the carrots, potatoes, celery and kohlrabi and dice half. Simmer the meat and grated vegetables with white wine and a little water, bay leaf, peppercorns, juniper berries and salt for about 1 1/4 hours. Remove the meat and strain the sauce with the vegetables. Add the diced vegetables and finish cooking with the meat. Serve sprinkled with chives.
