PREPARATIONPreheat the oven to 120 °C. PREPARATIONSeason the quail breasts with salt and pepper. Heat some oil and butter together in an ovenproof pan and fry the quail breasts in it on both sides. Place in the preheated oven and cook at 120 °C for about 4 minutes. Meanwhile, heat the olive oil for the marinade and sauté the peas in it. Add garlic, salt, pepper and mustard. Deglaze with sherry vinegar and remove from heat. For the semolina boil the milk with butter, a little salt and pepper. Sprinkle in the semolina and let it swell for 2 minutes.
