Cut out cookies (preferably stars) from the puff pastry with the cookie cutter. Place half of them on a baking tray lined with baking paper.
Place one Toffifee on each cookie, chocolate side down. Then cover with a second star. If necessary, pull the dough apart a little and press down well so that the Toffifee is no longer visible.
Brush the surface with egg yolk. Bake the Toffifee cookies in the oven at 180 °C convection oven until the puff pastry is golden brown.
