For the potato salad with bacon, cook the potatoes with the skin until they are soft. Melt bacon in small strips in a frying pan, add onions and sauté until translucent and dust with flour.
Sauté and add soup and vinegar. Bring to a boil for five minutes while stirring. Season with mustard, pepper and salt.
Peel the potatoes and cut them into slices. Mix quickly with the bacon marinade.
Clean, rinse and dab the lollo rosso. Cut the tomatoes in half. Mix the lollo rosso and tomatoes with the potato salad with bacon.
