For the potato flower gröstl boil and peel the potatoes. Dice the onion and slice the sausage (ham is also possible).

Heat olive oil in a frying pan, sauté with the onions and add the potatoes. Sauté well and mix in the sausage/ham cubes.

Season with salt and pepper. Finally, beat the eggs over the top, garnish with the fresh edible flowers and serve the potato flower gröstl.
