Separate the eggs for the pineapple pancake with coconut. Beat the yolks, milk, cream and sugar until foamy.
Stir in the coconut flakes. Beat the egg whites until stiff and fold into the yolk mixture, alternating with the flour. Heat the butter in a coated pan and pour in the mixture.
Spread the pineapple pieces on top. Fry the pancake on the bottom side over moderate heat until golden brown, turn it over and fry the second side until golden brown.
Break up with two forks and sprinkle the pineapple pancake with coconut with powdered sugar before serving.
