For piccata milanese, cook the spaghetti al dente, cut ham into thin strips and set aside. Meanwhile, mix the eggs in a bowl with Parmesan cheese and breadcrumbs.

Gently pat the cutlets, season with salt and pepper and coat in flour. Heat plenty of olive oil in a frying pan (not too hot) and fry the cutlets pulled through the egg-parmesan mixture and, when cooked, keep warm.

Put the tomatoes briefly in boiling water, rinse with cold water, peel and simmer gently in a saucepan, breaking them up with a wooden spoon. Season with salt, pepper and basil, toss the spaghetti in a pan with butter.

Sauté the ham strips in the olive oil, arrange the spaghetti with tomato sauce on plates, place the cutlets on top and garnish the piccata milanese with ham.
