For the peach fish curry, clean the catfish and cut into pieces. Season with soy sauce, lime juice, salt and pepper.

Peel and grate some ginger. Peel and finely chop the garlic clove. Remove the seeds from the chili pepper and chop finely.

Put all the ingredients except the spring onions and the peaches in an unperforated cooking container and cook (at 100°C for 10 minutes).

Clean the spring onions and cut them into fine rings, peel the peaches and cut them into pieces. Add to the remaining ingredients and cook everything together (at 100°C for 5 minutes).
