Instructions:

Place the peaches in boiling water.

Leave in water for 2 minutes, then rinse in cold water, peel off skin, cut in half and remove seeds.

Boil water with jelling sugar, put in peaches, cook until soft and season with lemon juice.

Refrigerate the compote.
