For the panna cotta with strawberry foam, first soak the gelatine in cold water. Mix the whipped cream with the vanilla pulp and sugar and bring to the boil. Squeeze out the gelatine and dissolve in it.
Allow the mixture to cool, then stir in the buttermilk. Pour into suitable glasses and refrigerate for about 3 hours.
For the strawberry foam, soak the gelatin in cold water. Chop the strawberries and puree with lime juice, water, sugar and vanilla sugar.
Heat a small part of the puree and dissolve the squeezed gelatine in it. Add the remaining puree and whisk vigorously.
Divide the strawberry foam among the glasses, then chill the glasses again for at least 1 hour. Serve the panna cotta with strawberry foam.
