For the Mediterranean oven vegetables, preheat the oven to 170°C convection.

Halve the melanzani and cut into slices about 1 centimeter thick. Cut the zucchini in half in the same way, but into slightly narrower slices.

Peel the onion and cut into fine rings, peel the garlic and chop finely. Peel the potatoes and cut them into medium sized pieces.

Mix the cut vegetables in a larger bowl with salt, pepper, rosemary, thyme and oil.

Pour everything into a baking dish and roast for 30 to 40 minutes.

Serve the Mediterranean Oven Vegetables as a side dish with grilled or short roasted meat.
