Instructions:

Peel the mangoes, cut the pulp from the stone. Peel bananas and cut into slices. Rinse the limes, rub dry.

Cut the peel from half of the limes into small spirals. Squeeze all limes. Cut open vanilla beans, scrape out pith.

Place fruit, lime juice and zest, vanilla bean and pulp, liqueur and preserving sugar in a high saucepan. Bring to a boil and bubble while stirring for about 4 min (note cooking time on jam sugar package).

Remove vanilla pods and lime zest and fill jam into jars. Seal with light roux foil.
