Prepare a shortcrust pastry from almonds, flour, butter, vanilla sugar, yolks, salt and sweetener.
To do this, sift almonds, flour and 1 pkg. vanilla sugar on a board and make a pit in the middle. Add butter in pieces and yolks and work the mixture with your hands until homogeneous.
Leave to rise in the refrigerator for half an hour. Preheat the oven to 200 °C. Roll out the dough to a thickness of 2 mm, cut out circles and poke three additional holes in every second slice.
This is best done with a Linz cookie cutter. Place the discs on a baking tray lined with baking paper and bake until golden brown.
Mix the jam with vanilla sugar until smooth and spread on the unperforated slices, cover with a perforated slice and press on.
