Hard-boil the eggs for about 10 minutes. Rinse asparagus spears and cut woody ends into small pieces. Cook the asparagus spears in boiling salted water for about
10 minutes. Rinse eggs, peel and cool a little…. Drain the asparagus. Clean the spring onion, rinse and cut into thin rings. Finely dice the eggs. For the salad dressing, mix vinegar with salt and pepper. Whisk in the oil. Add egg cubes and leek onion rings. Arrange asparagus spears and salmon on plates. Pour the salad dressing over the asparagus. Sprinkle a little pepper over salmon. Garnish with lemon slices and lemon balm. Serve with baguette.
