A more wonderful asparagus recipe:
Rinse asparagus spears, peel only the bottom end, cut into pieces not too large. Heat the oil in a saucepan, sauté the peeled and diced shallots together with the crushed garlic clove.
When the shallots are translucent, add the asparagus pieces with a little water and sherry. Season with salt, put a lid on the pot and cook for 10 minutes until tender.
Remove asparagus spears with a slotted spoon and place in a buttered ovenproof dish. Spread shrimps evenly on top
Reduce asparagus cooking liquid, gradually add butter cubes, carefully fold in whipped crème fraîche
Season the sauce
Cover asparagus spears with sauce and place in oven heated to 200 °C, bake for 5 min.
