For the fried prawns with tomato bread salad, first pluck the ciabatta into small pieces, place on a baking tray, drizzle with olive oil and salt a little. Roast in the preheated oven at 160 °C for about 20 minutes until crispy.
For the salad, quarter larger tomatoes, halve smaller ones. Quarter the olives, pluck the basil leaves from the stems. Mix all ingredients with the dressing and bread.
Sauté the shrimp in a little olive oil on all sides for about 2 minutes, season with a little salt and lemon juice and arrange on the salad.
Serve the fried shrimps with tomato bread salad.
