Put the fish, cut into pieces, through the mincer twice. Add butter and anchovy juice to the fish meat and mix well with it. Season. Stir the beaten egg yolks, flour and thin cream together and gradually add to the fish mixture, stirring continuously. If you get the impression that the mixture wants to curdle, put the baking bowl over boiling water and beat the mixture with a whisk until it is repeatedly smooth. Fold in the whipped cream and the stiffly beaten egg whites. Fill a greased baking dish sprinkled with breadcrumbs three-quarters full with the mixture. Cover the quantity with greaseproof paper and place the mold in a deep saucepan filled with boiling hot water. Leave in the stove at a very moderate temperature for 1 to 1 1/2 hours. The pudding is done when no dough sticks to a wooden stick poked into it. Carefully turn the pudding out onto a hot plate. Garnish with cooked shrimps and parsley.

Serve the pudding with melted butter, boiled potatoes, vegetables and a Dutch or mushroom sauce.
