For the fennel salad, make a marinade of oil, vinegar, sugar, lemon juice and spices.

Wash and clean the fennel, remove tough outer leaves and chop the stems. Do not remove the fennel greens.

Cut into very thin slices and pour the marinade over them. Leave to marinate for 10 minutes with the lid closed.
