Baguette slices Preheat oven to 200 °C. Cut baguette diagonally into slices and toast in oven until lightly brown. Set aside and keep warm.
Cut a small slice from the lower part of the tomato so that it stands upright. Cut away a generous slice from the stem and scoop out the fruit without damaging the skin. Place the tomato on a lightly oiled parchment paper and season the inside sufficiently with salt and pepper.
Place 2 basil leaves on each tomato and drizzle with olive oil. Slide an egg into each tomato (pay attention to the size of the tomatoes and thus to the overflow).
Sprinkle with parmesan cheese. Bake in the oven for 17 min until the eggs have the desired firmness (wax eggs). Place the tomatoes on the baguette slices and decorate with basil leaves and a little paprika powder and serve on the spot.
