For the curry udon noodles, heat oil in wok and saute onion for 7-10 minutes until translucent. Add meat and fry until cooked.

Add soup and sake and bring to a boil. Skim soup foam and simmer for 7 minutes.

Reduce heat and add curry cubes, stirring to dissolve. Cook over medium heat for 10 minutes. Meanwhile, cook udon noodles according to package directions and place in bowls.

Season curry with soy sauce and salt and pour over noodles. Garnish the curry udon noodles with spring onion and chili threads and serve.
