For the plain shortcrust pastry, sift flour and baking powder onto a clean work surface and make a well in the center. Add the powdered sugar, vanilla sugar, a little lemon zest, butter and the egg to the well. Quickly knead everything into a smooth dough.

Form a ball, wrap in plastic wrap and refrigerate for at least an hour.

Roll out the dough thinly on a floured work surface and cut out cookies. It is best to use different sized star or flower cookie cutters for this. Cut out the smallest star twice for each cookie Christmas tree.

Place on a baking tray lined with baking paper and bake in a preheated oven at 170 °C for approx. 12 minutes.

Allow the cookies to cool a little. Meanwhile, stir the jam until smooth.

Now assemble the tree. Start with the largest cookie. Spread jam on top and stagger the next largest cookie on top. Continue until you have a cookie Christmas tree.

Stick two of each of the smallest stars together with jam so they stand upright at the top.
