For the chili noodles with beef fillet strips, boil plenty of water, boil rice noodles in it for about 2 minutes and then let them stand for 3 minutes and strain. Soak the dried shrimp in boiled water for about 5 minutes and then chop them into small pieces. Cut the beef fillet into 1 cm thin slices, the Chinese cabbage into strips and chop the garlic, ginger and onions. Cut the young onions diagonally into rings. Heat the oil in a wok (or heavy frying pan) and fry the meat strips briefly.
Then add onions, garlic, ginger, bean sprouts, Chinese cabbage and shrimps and fry everything. Finely chop the chili and stir in as well as the coriander and cumin. Finally, mix in the noodles. Add green onions and season with oyster sauce, soy sauce, sugar and salt. Arrange the chili noodles with beef fillet strips in bowls and serve.
