A great cake recipe for any occasion:
In an effort to prepare sparingly, yet with variety, new food combinations were invented all the time. This also included the use of any leftovers that were still available. For example, bread tarts with a wide variety of fillings were conjured up from stale bread. The people of Basel are still masters in the preparation of sweet dishes and desserts, which is also proven by this old recipe.
Cut or break the Weggli into small pieces, then pour lukewarm milk over them and after ten minutes crush them with a mixer. Add the sugar, egg yolks, vanilla flavoring, cream, almond kernels, cherry brandy, lemon zest and cinnamon and finally mix in the cherries. Add any missing sweetness with sweetener.
Finally, fold the stiffly beaten egg whites exactly into the dough and fill it into a greased cake springform pan of about 24cm diameter. Bake the cake in a heated oven at moderate temperature for 40-50 minutes. After cooling, remove from the pan and sprinkle with nuts.
