Mix the fruits with the juice of one lemon. Save 1 slice of the pineapple for decoration. Cut the rest of the pineapple into very fine cubes or chop briefly with a food processor.
Stir the crème fraîche well with the sifted powdered sugar, vanilla and rum, then fold in the whipped cream. Carefully mix with the pineapple chunks.
Arrange the fruit with the pineapple cream on plates and garnish with coconut flakes.
