Buttermilk Mousse with Lemon Balm

Instructions:

For the buttermilk mousse, whip the cream with half of the powdered sugar until creamy but not too firm.

Squeeze the gelatine well, dissolve in approx. 2-3 tablespoons of warmed buttermilk and then mix well with the remaining buttermilk.

Stir the other half of the powdered sugar into the buttermilk as well and add the lemon flavoring and lemon balm syrup (or optionally the chopped leaves) and mix well.

Finally, fold in the whipped cream. Now pour about 2-3 tablespoons of fruit puree into nice glasses or dessert bowls, spread the buttermilk cream evenly on top, garnish with a lemon balm leaf and place in the refrigerator for at least 30 minutes.
