For the beef and asparagus salad, peel the white asparagus, wash the green asparagus and cut off the woody ends of both.
Put enough water on to boil with salt and sugar. Cook the asparagus in it until al dente, take it out and cut it into pieces of about 3 cm.
Cut the beef into fine strips. Peel the onion and cut it into fine rings. Peel the boiled eggs and cut them into slices or eighths.
Sauté the asparagus pieces with the olive oil and garlic. Wash the young onions and cut them into fine rings.
Wash the lettuce and spin dry. For the marinade, put all the ingredients in a jar with a lid, close it well and shake it until the ingredients are well mixed.
Arrange the individual ingredients on plates, mix loosely and spread the marinade over them with a spoon.
