For the bananas with orange and lime juice, boil water with sugar and reduce to a syrup. Allow to cool slightly. Rinse orange and lime with hot water and rub dry. Thinly peel the skins of the fruits with a zester, squeeze out the juice. Peel and slice the bananas.
Add the banana pieces, citrus juice and most of the peels (set aside some peels for garnish) to the sugar syrup. Divide the mixture among dessert bowls and garnish with the remaining peels. Refrigerate the bananas with orange and lime juice for at least 3 hours and serve cold.
