For an avocado egg dish, first divide, pit and peel an avocado. Then cut one half into 0.5cm thin slices.
Heat some olive oil in a small pan and fry the avocado slices in it from both sides. Now beat the eggs over the avocados in the pan, sprinkle chopped chives, chopped walnuts, salt and pepper.
As a precaution, break up the eggs a bit and turn them until they have the desired consistency. Then enjoy with a slice of brown bread.
