For the arugula and pear salad, wash and shake off the arugula and place in a bowl. Wash the pear, remove the core, cut into bite-sized pieces and add to the arugula.
Also cut the camembert into bite-sized pieces and add to the arugula and pear salad.
For the marinade, mix the apple-honey vinegar with water, herb salt and a pinch of sugar and pour over the salad.
Just before serving, pour the pumpkin seed oil over the salad and mix well.
