For the wholemeal farmhouse bread, dissolve sourdough in water, stir into the preheated flours and let stand overnight. Add salt and dissolved yeast and possibly flaxseed to the bowl. Add lukewarm water and knead well to form a dough and let rise for about 40 minutes. When the dough has doubled in volume, place it in greased loaf pans or form it into a loaf and let it stand for another 5 minutes. Bake in the preheated oven at 180-200°C for 1-1 1/2 hours with bottom heat. Meanwhile, it is best to put a cup of water in the oven. The wholemeal farmhouse bread is ready as soon as it sounds hollow when you tap on it.
