Carefully rinse the raspberries (if possible, do not do this, because the fruit loses a lot of flavor). Sprinkle half of them with sugar and mix. Mash the remaining raspberries with a fork, stir through with whipped cream and honey and maybe sweeten a little bit. Cut the melons in a jagged shape all around with a sharp kitchen knife to the center, take half of them apart and remove the seeds with a spoon. Form 8 small balls from the ice cream with an ice cream scoop or cut 8 cubes. Place 2 ice cream balls in each melon half, add a small amount of raspberry sauce and the remaining raspberries to the ice cream. Garnish the dessert with lemon balm to taste.
