Cut fillets into 2 cm thick slices and lightly plate. Season with salt, pepper and aroma. Coat a suitable Reindl with olive oil. Wrap fillet pieces with pancetta and spread out in the Reindl. Peel and chop onions and garlic. Sprinkle onion and garlic over the meat.
Sprinkle with sweet paprika powder. Cover Reindl with aluminum foil and cook for about 30 minutes at 180 degrees. Remove Reindl, pour ¼ liter of cream and put in the oven for another 10 minutes.
Arrange pork fillet “Madeleine” on plates. Serve with long grain rice and salad. Garnish with chives.
