Instructions:

For the curd apple vanilla pancakes, whisk together the ingredients for the pancakes at least an hour before preparing.

Store in the refrigerator. Add some mineral water to the pancake batter until the batter has a nice creamy consistency.

The mineral water makes the pancakes airy. Fry the pancakes on both sides until golden brown and keep warm in the oven.

For the filling, peel the apples, quarter them and cut them into small cubes. Mix the curd cheese, the apple cubes, the honey and the vanilla sugar and stir with some rum to a firm cream.

Spread the filling into the pancakes, roll them up and serve the curd-apple-vanilla pancakes.
