Cook the well washed and de-stemmed spinach in hot salted water with a pinch of baking soda for about 4 minutes. Quench in ice water. Squeeze well and toss in hot butter. Season with salt, pepper, a pinch of clove powder and crushed garlic. Place in a buttered gratin dish. For the gratin sauce, mix all the ingredients together well. Pour the cheese sauce over the spinach and bake in a preheated oven at 240 °C (top heat).
