Rinse the trout under cold running water, dry, season inside and out with salt. Place in a shallow gratin dish greased with butter. Cut bacon slices into 2 cm pieces, place on top of fish. Place the gratin dish on the broiler in the oven. Season whipped cream with pepper, salt, cayenne bell pepper, paprika and sugar, after about 15 minutes of steaming time, pour over trout and steam for another 5 minutes until soft.
