For the pasta salad with fried shrimps, defrost the frozen shrimps first.
Wash the arugula and spin dry. Clean the leek and cut into rings. Wash parsley, shake dry and chop finely without stems.
Cook pasta in salted water until al dente. 1 minute before the end of cooking, add the leek.
Mix olive oil, orange juice and parsley. Season to taste with salt and pepper.
Strain the leeks and pasta, drain and transfer to a bowl. Toss with the arugula and salad dressing.
Season shirmps with salt and pepper and fry briefly in hot olive oil.
Serve the pasta salad with fried shrimp.
