For the cherry rice with minced balls, cut the bread roll into pieces and soak briefly in water.
Cook the rice for about 8 minutes in enough salted water until al dente, drain and rinse with cold water.
Wash and slice the spring onions and fry them briefly in olive oil. Add the pitted cherries to the pan and sauté at low temperature for 10 minutes. Season with salt, enough pepper and a little sugar. Mix the rice with the onions and cherries and let it stand for a few minutes.
In the meantime, mix the minced meat with the soaked breadcrumbs, eggs and diced onion and season well with salt and pepper. Form into small balls with moistened hands and fry them in not too much hot oil in a pan. Finally, fry the almonds and pistachios briefly.
Serve the cherry rice with the minced balls and the nuts.
