For the Everything Green Orange Avocado Salad, wash quinoa in a colander, drain and bring to a boil with twice the amount of water, salt and plenty of Everything Green and simmer (over low heat) until the quinoa has absorbed all the liquid.
Set aside and allow to cool slightly. In the meantime, peel 2 oranges, fillet them and cut them into fine slices. Squeeze the third orange.
Then peel the avocados and cut them first into strips, then into pieces of about 1-2 cm. Wash 3-4 stalks of celery and cut them into fine slices.
For the dressing, mix the orange juice with salt, some pepper and plenty of olive oil. First add the oranges and the celery to the lukewarm quinoa, then add the dressing and mix well.
Finally, carefully fold in the avocados. Let the salad stand for 10-15 minutes.
