Bring vegetable broth to a boil. Mix in the spelt meal and cook on the stove top for about ten minutes, stirring constantly. Fold in grated cheese and season with pepper and salt to taste.
Arrange the medallions (3 to 4 per person). Iljo Orkic takes a glazed spoon, browns the cut-out portions in butter, turns them, presses them evenly with a spatula and then fries the other side.
For the pumpkin seed sauce, heat the pumpkin seed oil briefly and fry the pumpkin seeds in it. Extinguish with full cream and stir a little.
To serve, pour the sauce onto a heated plate and offer the spelt daler on top. Serve with fresh seasonal vegetables.
Tip: Allow yourself a good Parmesan – that refines the flavor!
