For the One Pot Pasta with Tuna and Feta, first peel and finely dice the onion and garlic. Wash and coarsely dice the melanzani.

In a wide pot, heat the oil and sauté the diced melanzani for a few minutes. Then add the onion and garlic and fry briefly. Add the passata, water, pasta, salt, pepper, oregano and olives. Put the lid on and let it boil. Then take the lid off again and let it simmer for about 12-15 minutes. Stir again and again.

In the meantime, wash the spinach and dry it well. Cut into strips. Just before the end of the cooking time, add the tuna and spinach and stir well. Crumble in half of the feta. Season again with salt and pepper.

Portion the One Pot Pasta with Tuna and Feta and crumble the remaining feta and add on top.
