For the frittata with ham, peel the potatoes and cut them into 1 cm cubes. Cut the chives into fine rolls.
Heat the olive oil in a non-stick frying pan and fry the potato cubes for 10 minutes.
Mix the eggs well, add the Parmesan and season with pepper and salt. Then pour the egg mixture into a frying pan.
Cook the frittata in a hot oven at 140 degrees Celsius (convection oven 120 degrees) on the middle shelf for about 10-12 minutes.
Just before it is ready, sprinkle with chive rolls. Arrange the frittata with ham and serve.
