For the zucchini cake, mix eggs, oil, vanilla sugar and sugar until creamy. Stir in nuts, flour, baking powder, baking soda, cinnamon, lemon zest, some lemon juice and zucchini.

Grease a loaf pan, pour in the batter and bake the zucchini cake at 180 °C for 70 minutes
