For the wine foam fondue, beat the egg yolks with the sugar in a fondue pot on very low heat until thick and creamy. Add the grated lemon peel.

Continue to whisk vigorously and gradually add the juice of one lemon and wine. At the very end, stir in sherry.

Beat the wine foam sauce until it is stiff.

Serve the wine foam fondue on a small warmer.
