Rub the venison steaks with pepper, salt and juniper berries and let them stand for a while. Clean the mushrooms and cut them into quarters. Peel the onion and cut into small cubes. Heat the butter in a pan and fry the mushrooms in it. Add the onion and fry. Turn the temperature to the lowest setting and season the mushrooms with thyme, pepper and salt. Stir in crème fraîche just before serving. Heat clarified butter in a frying pan and fry the venison steaks in it for about 3 to 4 minutes on each side. Serve immediately with blueberry cheese and mushrooms.Blueberry cheese:Cut cheese into cubes and mix with blueberries. Mix yogurt well with lemon juice, salt, pepper and sugar and fold into blueberry-Gouda mixture just before serving.
