For the tomato dip, remove the greens from the tomatoes, wash them, put them in boiling salted water for a few seconds, rinse and remove the skins. Core, dice and lightly puree the tomatoes so that chunks remain.
Dice the dried tomatoes, chop the olives and chili. Add everything to the sauce and refine with a little oil from the dried tomatoes. Peel the garlic, press it and add it. Stir well and season the tomato dip with sugar, salt, pepper and lemon juice.
