Instructions:

A great pasta dish for any occasion:

Mix all ingredients for the filling (chop chives beforehand), set aside to cool.

Knead all ingredients for the dough into a smooth dough. Form into a ball, rest for 20-30 min. covered with a wet dishcloth.

For the soup, rinse the vegetables, cut the leek into half rings, tomatoes into eighths. Chop the onion and garlic, cut the ham into thin strips.

Sauté garlic, onion and ham in hot olive oil in a large saucepan. Add vegetables and chopped parsley and sauté briefly, turning. Drain with clear soup and simmer on low heat for 15 minutes.

In the meantime, roll out the dough for the ravioli and divide it into two equal halves. On one half, place the filling by teaspoonfuls at even intervals. Now fold the other half over it, press it smooth and cut out the ravioli squares.

Add the pasta to the soup and cook for about 10 minutes. Sprinkle with grated Parmesan and bring to the table.
